- 1 carrot, peeled and finely chopped
- 2 cups filtered water or vegetable stock
- ½ teaspoon sea salt
- ½ lemon, juice only
- 1 teaspoon coconut oil
- 1 tablespoon chia seeds
- Roasted nut mix, 1 teaspoon coconut milk for garnish
Heat the coconut oil in a saucepan, add onions, garlic, carrots, parsnips, celery and broccoli, cook over low heat for five minutes, stirring frequently. Add filtered water or vegetable broth, bring to a boil, then cover and cook for 5-7 minutes, until vegetables are tender. But don’t overcook!
