Ingredients:

  • 1 can (400 ml) coconut milk

  • 3/4 teaspoon cinnamon

  • 2 tablespoons maple syrup

  • 1 teaspoon vanilla extract

  • 4 tablespoons chia seeds

  • 1 pomegranate

  • 2 persimmons

For the caramelized layer

  • 1/4 cup almonds

  • 2 tablespoons sugar

  • 1/2 tablespoon coconut oil

  • a pinch of salt

Preparation:

In a large bowl, combine coconut milk with maple syrup, vanilla extract, and cinnamon.
Add chia seeds, stir and refrigerate for at least an hour, preferably overnight.
Peel and cut the persimmons into small cubes before serving and peel the pomegranate. In a dry saucepan, heat 2 tablespoons of sugar until it caramelizes, then add the coconut oil, a pinch of salt and chopped almonds. Stir quickly, remove from heat and transfer to parchment paper. Let cool. Start assembling the dessert by alternating the fruity and caramelized hazelnut layers. Finish with fruit and add more nuts. Serve chilled. Enjoy!
