  • 1 beetroot (washed, peeled, diced)
  • 2 glasses of water
  • 1/4 cup honey

Vegetarian Rose Milk


Whisk the beets and water until smooth. Strain it through a fine sieve.
Combine the beetroot juice and honey in a small saucepan and bring to a boil over medium heat. Continue cooking until the raw beetroot odor disappears; if there is foam on top, scoop it up with a spoon. Cool completely, mix with rose water. Transfer to a clean, sterile glass jar and mix syrup with chilled alternate milk just before serving until desired color + sweetness.
Serve chilled. Enjoy! The syrup can be kept in the refrigerator in a glass container for up to a week.
